Mango Salsa 3 Plum Tomatoes 1/2 White Onion 3 Cloves of Garlic 1/4 Unripe (hard) mango 1/4 cup Fresh Cilantro 3 Jalapeños 2 ounces Fresh Pineapple 1 teaspoon Kosher Salt Half of a Lime to squeeze on top when plating Chipotle Flavored Plantain Chips 6 Green Plantains 1 tablespoon Garlic Powder 1 tablespoon Onion Powder 1 tablespoon Chipotle Seasoning 1/2 tablespoon Kosher SaltPREPARATION:
Mango Salsa
- Dice all the ingredients and stir the mixture.
- Refrigerate this mixture for at least one hour to allow all the flavors to incorporate well.
Chipotle Flavored Plantain Chips
- Slice the plantains into chips (fairly thin, about ¼ thick). Fry the chips. Add seasonings to taste.
