Roasted Red Onion & Garlic with Creamy Mashed Sweet Potatoes

 
INGREDIENTS

6 cloves garlic, peeled 1 red onion, quartered, then sliced into 1-inch slices 1/4 cup olive oil Salt and black pepper 2 pounds sweet potatoes, cooked and mashed (about 2-1/2 to 3 cups) 1 tablespoon butter

PREPARATION:

  1. Preheat oven to 300°F. Place the garlic and onion on an 11X8-inch sheet of foil, drizzle with the oil and sprinkle with salt and pepper. Fold foil edges over vegetables to make a closed packet. Place packet in a glass baking dish. Bake about 1 hour or until onions are soft and translucent.
  2. In a medium bowl, combine the mashed potatoes and butter with the roasted garlic, onion and any juices. Serve immediately.
