PREPARATION:
- Pierce potatoes all over with fork. Microwave potatoes at HIGH 10 minutes or until soft. Refrigerate until cool to the touch.
- Preheat oven to 350°F. Peel sweet potatoes. Place potatoes in large bowl; mash. Add egg, butter, orange juice, salt and pepper; stir until well blended.
- Place potato mixture in 1-quart casserole. Arrange pineapple slices on top; sprinkle with brown sugar. Bake, covered, 25 minutes. Remove cover; bake 15 minutes or until sugar is caramelized. Serve immediately.
