Easy Sweet Potato Casserole with Pineapple & Brown Sugar - Simple Recipe

 
INGREDIENTS

2‑1/2 pounds (3 medium) sweet potatoes 1 egg 1 tablespoon butter, softened 1/3 cup orange juice Salt and black pepper 1/4 cup packed brown sugar 5 pineapple slices (or as many as needed to cover the top)

PREPARATION:

  1. Pierce potatoes all over with fork. Microwave potatoes at HIGH 10 minutes or until soft. Refrigerate until cool to the touch.
  2. Preheat oven to 350°F. Peel sweet potatoes. Place potatoes in large bowl; mash. Add egg, butter, orange juice, salt and pepper; stir until well blended.
  3. Place potato mixture in 1-quart casserole. Arrange pineapple slices on top; sprinkle with brown sugar. Bake, covered, 25 minutes. Remove cover; bake 15 minutes or until sugar is caramelized. Serve immediately.
