teaspoons frozen orange juice concentrate, thawed

boneless skinless chicken breast (about 1 pound), cooked and chopped

large kiwi, thinly sliced

cup canned mandarin oranges, drained
1/4
cup finely chopped celery

lettuce leaves, washed

tablespoons coarsely chopped cashews
PREPARATION:
- Combine mayonnaise, sour cream, orange juice concentrate and orange peel in small bowl. Add chicken, kiwi, oranges and celery; toss to coat.
- Cover; refrigerate 2 hours. Serve on lettuce leaves. Sprinkle with cashews.
