cup unsweetened cocoa powder

cup boiling water

cup sugar

tablespoon instant coffee granules

teaspoon vanilla

pint coffee nonfat frozen yogurt

whole coffee beans (optional)
PREPARATION:
- Melt margarine in heavy saucepan over low heat. Add cocoa; cook and stir 3 minutes. Add boiling water, sugar and coffee; cook and stir until thickened. Remove from heat; stir in vanilla. Cool to room temperature.
- Place 2 tablespoons frozen yogurt in bottom of each of 4 parfait glasses. Top each with 1 tablespoon sauce. Top sauce with another 2 tablespoons frozen yogurt; top frozen yogurt with 2 tablespoons sauce. Repeat layering twice more. Top each parfait with 3 coffee beans, if desired.
Cook's Note
Cocoa powder gives desserts rich chocolate flavor without adding fat since practically all of the cocoa butter has been removed.
