Easy Sugar-Free Lemon Blueberry Gelatin - Refreshing Dessert Recipe

INGREDIENTS

1 package (4-serving size) sugar-free lemon-flavored gelatin 1/2 cup water 1 cup ice cubes 2 tablespoons lemon juice 1‑1/4 cups vanilla low-fat yogurt 1 teaspoon grated lemon peel 1/2 cup frozen blueberries

PREPARATION:

  1. Combine gelatin and water in medium saucepan. Bring to a boil over medium-high heat. Remove from heat; stir until gelatin is completely dissolved.
  2. Add ice cubes and lemon juice; stir until ice cubes have melted and gelatin mixture has thickened. Remove and discard any unmelted pieces of ice.
  3. Whisk in yogurt and lemon peel until completely smooth. Transfer mixture to 9-inch pie plate or decorative serving bowl. Cover with plastic wrap; refrigerate until firm.
  4. At serving time, thaw blueberries in colander under cold running water. Drain on paper towels. To serve, mound blueberries in center of gelatin.
Note This tastes like a creamy lemon meringue pie without the meringue! Serve it as either a salad or dessert.
