INGREDIENTS
1 package (4-serving size) sugar-free lemon-flavored gelatin 1/2 cup water 1 cup ice cubes 2 tablespoons lemon juice 1‑1/4 cups vanilla low-fat yogurt 1 teaspoon grated lemon peel 1/2 cup frozen blueberriesPREPARATION:
- Combine gelatin and water in medium saucepan. Bring to a boil over medium-high heat. Remove from heat; stir until gelatin is completely dissolved.
- Add ice cubes and lemon juice; stir until ice cubes have melted and gelatin mixture has thickened. Remove and discard any unmelted pieces of ice.
- Whisk in yogurt and lemon peel until completely smooth. Transfer mixture to 9-inch pie plate or decorative serving bowl. Cover with plastic wrap; refrigerate until firm.
- At serving time, thaw blueberries in colander under cold running water. Drain on paper towels. To serve, mound blueberries in center of gelatin.
