Easy Mini Waffles with Strawberry Topping Recipe

 
INGREDIENTS

1 cup sliced strawberries 1/2 tablespoon sugar substitute* 2 tablespoons orange juice 1/2 teaspoon grated orange peel (optional) 16 frozen mini waffles or 4 regular waffles 1/4 cup light sour cream *This recipe was tested with sucralose-based sugar substitute.

PREPARATION:

  1. Combine strawberries, sugar substitute, orange juice and orange peel, if desired, in medium bowl. Toss gently, yet thoroughly, to blend. Let stand 20 minutes.
  2. Toast waffles. Place 4 mini waffles, or 1 regular-size waffle, on each of 4 plates to make 4 servings. Top each serving with 1 tablespoon sour cream. Spoon 1/4 cup berry mixture evenly around sour cream.
