*This recipe was tested with sucralose-based sugar substitute.
PREPARATION:
- Combine strawberries, sugar substitute, orange juice and orange peel, if desired, in medium bowl. Toss gently, yet thoroughly, to blend. Let stand 20 minutes.
- Toast waffles. Place 4 mini waffles, or 1 regular-size waffle, on each of 4 plates to make 4 servings. Top each serving with 1 tablespoon sour cream. Spoon 1/4 cup berry mixture evenly around sour cream.
