INGREDIENTS
2 tablespoons olive or vegetable oil 4 trout fillets (about 6 ounces each) 1/2 cup seasoned bread crumbs 1/2 cup pine nutsPREPARATION:
- Heat oil in large skillet over medium heat. Lightly coat fish with bread crumbs. Add to skillet.
- Cook 4 minutes on each side or until fish begins to flake when tested with fork. Transfer fish to serving platter; keep warm.
- Add pine nuts to drippings in skillet. Cook and stir 3 minutes or until nuts are lightly toasted. Sprinkle over fish.
