Salmon Sliders with Spicy Aioli - Kick Off Cook Off Recipe

INGREDIENTS

Sliders: 2 lbs Fresh Atlantic salmon 2 doz. small slider buns Northwestern marinade Spicy Aioli Marinade: 1/2 cup butter 1/3 cup brown sugar 1/4 cup red wine Salt & pepper to taste Aioli sauce: 1 cup mayonnaise 1/8 cup Thai chili paste 1/2 tablespoon espelette pepper 1/8 cup lime juice 1/2 tablespoon salt 1 teaspoon cayenne pepper

PREPARATION:

Aioli Sauce:

  1. Mix all ingredients and chill until ready to use.

Marinade:

  1. Melt butter and sugar over medium heat, stirring constantly. Add salt and pepper, then red wine. Keep stirring for 1 minute until sauce thickens and bubbles up. Remove from heat.
  2. Pour over prepared salmon filets

Sliders:

  1. Grill salmon until just done. Cut into 2 in square files pieces and place on warmed, lightly buttered bun. Drizzle with spicy aioli and serve warm.
