INGREDIENTS

Pork Salsa Onion Jalapenos Heirloom tomatoes Peaches Corn Cilantro Beef Rub salt pepper cilantro chili powder paprika garlic onion cayanne pepper

PREPARATION:

  1. Trim for clean uniform look. Remove silver skin, french bones.
  2. Cut hole thorugh the center of pork. Apply rub.
  3. Cook at 275 for 3 hours. Aim for 155 degress.
  4. Grill salsa ingredients, sprinkle them with beef rub.
  5. Chop salsa ingredients, insert into pork roast.
