teaspoon Jerk Seasoning (recipe)

boneless skinless chicken breasts (about 1 pound)

tablespoons reduced-fat mayonnaise

tablespoons plain nonfat yogurt
1
tablespoon mango chutney
4
onion rolls (2 ounces each), split and toasted
4
lettuce leaves

slices peeled mango or papaya
PREPARATION:
- Prepare Jerk Seasoning. Sprinkle chicken with jerk seasoning and set aside. Spray grid with nonstick cooking spray. Prepare grill for direct cooking.
- Place chicken on grid, 3 to 4 inches from medium-hot coals. Grill 5 to 7 minutes on each side or until no longer pink in center.
- Combine mayonnaise, yogurt and chutney in small bowl; spread 1 tablespoonful onto each onion roll.
- Place chicken on onion roll bottoms; top each with lettuce leaf, 2 slices of fruit and roll top.
