Prewashed spinach is a great convenience for busy cooks. But if it's not available, wash spinach well in a sink full of water to remove dirt and sand, then remove the tough stems before cooking.
INGREDIENTS
Nonstick cooking spray 1 medium red bell pepper, cut into 1-inch pieces 1 clove garlic, minced 1 pound fresh spinach, washed, stemmed and chopped 1 tablespoon prepared yellow mustard 1 teaspoon lemon juice 1/4 teaspoon red pepper flakesPREPARATION:
- Spray large skillet with cooking spray; heat over medium heat. Add bell pepper and garlic; cook and stir 3 minutes.
- Add spinach; cook and stir 3 minutes or until spinach just begins to wilt.
- Stir in mustard, lemon juice and red pepper flakes. Serve immediately.
