ounces uncooked pasta twists

cups broccoli florets

cup shredded carrots

medium Red or Golden Delicious apple, cored, seeded and chopped

cup plain nonfat yogurt
1/3
cup apple juice

tablespoons cider vinegar

tablespoon olive oil
1
tablespoon Dijon mustard
1
teaspoon honey
1/2
teaspoon dried thyme leaves
Lettuce leaves
PREPARATION:
- Cook pasta according to package directions, omitting salt; add broccoli during the last 2 minutes of cooking. Drain; rinse under cold running water until pasta and broccoli are cool. Drain.
- Place pasta, broccoli, carrots and apple in medium bowl.
- Combine yogurt, apple juice, cider vinegar, oil, mustard, honey, and thyme in small bowl. Pour over pasta mixture; toss to coat.
- Serve on individual dishes lined with lettuce. Garnish with apple slices, if desired.
