INGREDIENTS
Hot & Spicy Butter, Scallion Butter or Chili-Mustard Butter (recipes follow) 4 fresh or thawed frozen lobster tails (about 5 ounces each)PREPARATION:
- Prepare grill for direct cooking. Prepare choice of butter mixtures.
- Rinse lobster tails in cold water. Butterfly tails by cutting lengthwise through centers of hard top shells and meat. Cut to, but not through, bottoms of shells. Press shell halves of tails apart with fingers. Brush lobster meat with butter mixture.
- Place tails on grid, meat side down. Grill, uncovered, over medium-high heat 4 minutes. Turn tails meat side up. Brush with butter mixture; grill 4 to 5 minutes or until lobster meat turns opaque.
- Heat remaining butter mixture, stirring occasionally. Serve butter mixture for dipping.
