INGREDIENTS
Cream Puffs (recipe) 3/4 cup granulated sugar 3 tablespoons cornstarch 1‑1/2 cups orange juice 3 egg yolks, beaten 1 cup plain low-fat yogurt 2 tablespoons butter 1/2 teaspoon almond extract 1 can (11 ounces) mandarin oranges, drained Powdered sugarPREPARATION:
- Prepare Cream Puffs.
- Combine sugar, cornstarch and orange juice in medium saucepan. Cook over medium heat until bubbly, stirring often. Cook 2 minutes; remove from heat. Gradually stir half of hot mixture into egg yolks. Return to saucepan; bring to a boil over medium-high heat. Reduce heat to low and cook 2 minutes; remove from heat. Stir in yogurt, butter and extract.
- To serve, spoon filling into bottoms of cream puffs. Pile orange sections on top of filling. Add cream puff tops. Lightly sift powdered sugar over tops.
