INGREDIENTS
Vegetable oil 1/2 cup whipping cream 1 egg 1 teaspoon vanilla 1 cup self-rising flour 1/3 cup self-rising cornmeal 1/3 cup granulated sugar 1‑1/2 cups fresh blueberries Powdered sugarPREPARATION:
- Heat 2 inches oil in large heavy skillet to 375°F on deep-fat thermometer.
- Meanwhile, combine cream, egg and vanilla in small bowl.
- Combine flour, cornmeal and granulated sugar in large bowl. Stir in cream mixture just until moistened. Fold in blueberries.
- Carefully drop batter by heaping tablespoonfuls into hot oil. Fry until golden brown, turning once. Drain well on paper towels. Sprinkle with powdered sugar; serve immediately.
