PREPARATION:
- Prepare Red Eye Cubes.
- Combine sugar, water, ginger and lemon rind in medium saucepan. Bring to a boil. Reduce heat to low; simmer 5 minutes or until sugar dissolves and becomes syrupy. Set aside; cool completely. Stir in lemon juice and chill until serving time.
- Strain 2-1/2 cups lemon juice mixture into 1-quart measuring cup.
- For punch, pour lemon syrup into large bowl. Add club soda; stir briefly. For individual servings, combine 1/4 cup lemon syrup and 3/4 cup club soda. Add 1 or 2 Red Eye Cubes; garnish with lemon slice.
