PREPARATION:
- Preheat oven to 350°F.
- Combine flour, baking soda and salt in small bowl; set aside. Beat butter and brown sugar in large bowl at medium speed of electric mixer until light and fluffy. Beat in eggs, 1 at a time, until well blended. Beat in vanilla. Gradually beat in flour mixture at low speed until blended. Stir in oats.
- Drop dough by level 1/4 cupfuls 3 inches apart onto ungreased cookie sheets. Flatten dough with bottom of glass that has been dipped in granulated sugar until dough is 2 inches in diameter. Press chocolate pieces into cookies for eyes; use cinnamon candies or licorice for mouth.
- Bake 12 to 14 minutes or until cookies are set and edges are golden brown. Cool on cookie sheets 2 minutes. Remove to wire rack; cool completely.
- Decorate cookies with frosting and coconut for hair, if desired.
