Healthy Mediterranean Chicken Salad Sandwich Recipe | Easy & Delicious

 
INGREDIENTS

4 boneless skinless chicken breasts 1 teaspoon dried basil 1/4 teaspoon salt 1/4 teaspoon black pepper 1 cup chopped cucumber 1/2 cup mayonnaise 1/4 cup chopped roasted red pepper 1/4 cup pitted black olive slices 1/4 cup yogurt 1/4 teaspoon garlic powder 6 kaiser rolls, split Additional mayonnaise Lettuce leaves

PREPARATION:

  1. Place chicken, 1/2 cup water, basil, salt and pepper in medium saucepan; bring to a boil. Reduce heat; simmer covered 10 to 12 minutes or until chicken is no longer pink in center. Remove chicken from saucepan; cool. Cut into 1/2-inch pieces.
  2. Combine chicken, cucumber, mayonnaise, red pepper, olives, yogurt and garlic powder in medium bowl; toss to coat well.
  3. Spread rolls with additional mayonnaise. Top with lettuce and chicken salad mixture.
