Easy Shrimp Lo Mein with Vegetables - Quick & Healthy Recipe

 
INGREDIENTS

2 tablespoons vegetable oil 1 pound uncooked medium shrimp, peeled 2 packages (21 ounces each) frozen lo mein stir-fry mix with sauce 1 small wedge cabbage 1/4 cup peanuts, chopped 2 tablespoons chopped fresh cilantro

PREPARATION:

  1. Heat oil in wok or large skillet over medium-high heat. Add shrimp; stir-fry 3 minutes or until shrimp are pink and opaque. Remove shrimp from wok to medium bowl. Set aside.
  2. Remove sauce packet from stir-fry mix. Add frozen vegetables and noodles to wok; stir in sauce. Cover and cook 7 to 8 minutes, stirring frequently.
  3. While vegetable mixture is cooking, shred cabbage.
  4. Stir shrimp into vegetable mixture; heat through. Sprinkle with peanuts and cilantro. Serve with cabbage.
