tablespoons vegetable oil

pound uncooked medium shrimp, peeled
2
packages (21 ounces each) frozen lo mein stir-fry mix with sauce
1
small wedge cabbage
1/4
cup peanuts, chopped
2
tablespoons chopped fresh cilantro
PREPARATION:
- Heat oil in wok or large skillet over medium-high heat. Add shrimp; stir-fry 3 minutes or until shrimp are pink and opaque. Remove shrimp from wok to medium bowl. Set aside.
- Remove sauce packet from stir-fry mix. Add frozen vegetables and noodles to wok; stir in sauce. Cover and cook 7 to 8 minutes, stirring frequently.
- While vegetable mixture is cooking, shred cabbage.
- Stir shrimp into vegetable mixture; heat through. Sprinkle with peanuts and cilantro. Serve with cabbage.
Cutting Corners
Since medium shrimp do not require deveining, substitute them for large shrimp whenever possible to save valuable preparation time.
