Simple Green Beans with Garlic & Soy Sauce - YIELD

 

YIELD Makes 6 servings

INGREDIENTS

2 pounds fresh green beans 2 tablespoons olive oil 3 cloves garlic, minced 1 tablespoon reduced-sodium soy sauce 1/8 teaspoon black pepper

PREPARATION:

  1. Rinse beans, but do not drain or dry. Snap into 2-inch lengths. Set aside.
  2. Heat oil in large saucepan over medium heat. Cook garlic 1 to 2 minutes or until aromatic, taking care not to burn. Add soy sauce and wet beans. Cover and steam, lifting lid to stir occasionally. Steam beans until tender-crisp and bright green, adding small amounts of water if needed. Sprinkle with pepper before serving.
