Easy Stovetop Summer Squash with Herb Stuffing

 
Stovetop Summer Squash

YIELD Makes 6 servings

INGREDIENTS

1‑2/3 cups water 1 package (6 ounces) stuffing mix with herb seasoning packet 3 tablespoons butter 1 cup chopped onion 1 cup chopped red bell pepper 1 tablespoon minced fresh basil 2 cups sliced yellow squash 2 cups sliced zucchini

PREPARATION:

  1. Bring water to a boil in 2-quart saucepan. Add seasoning packet from stuffing mix; cover and cook over low heat 15 minutes.
  2. Meanwhile, melt butter in large skillet over medium heat. Add onion and bell pepper; cook and stir 3 minutes or until tender. Add basil, squash and zucchini; cook and stir about 3 minutes or until vegetables are tender.
  3. Transfer squash mixture to saucepan with seasoning blend. Add stuffing croutons; mix until all liquid is absorbed. Remove from heat; cover and let stand 5 minutes. Fluff with fork before serving.
