Country Green Beans with Ham

YIELD Makes 4 servings

Select fresh green beans that are firm, smooth and brightly colored. They should be crisp enough to snap when bent in half. Avoid those that are discolored, spotted or leathery looking.

INGREDIENTS

2 teaspoons olive oil 1/4 cup minced onion 1 clove garlic, minced 1 pound fresh green beans, rinsed and drained 1 cup chopped fresh tomatoes 6 slices (2 ounces) thinly sliced low-fat smoked turkey ham 1 tablespoon chopped fresh marjoram 2 teaspoons chopped fresh basil 1/8 teaspoon black pepper 1/4 cup herbed croutons

PREPARATION:

  1. Heat oil in medium saucepan over medium heat. Add onion and garlic; cook and stir about 4 minutes or until onion is tender. Reduce heat to low.
  2. Add green beans, tomatoes, turkey-ham, marjoram, basil and pepper. Cook about 10 minutes, stirring occasionally, until liquid from tomatoes is absorbed.
  3. Transfer mixture to serving dish. Top with croutons.
