INGREDIENTS
1 cup yellow corn bread mix 1/4 cup minced onion 2 tablespoons minced pimiento 1/4 teaspoon salt 1/8 teaspoon ground red pepper 1/8 teaspoon black pepper 3/4 cup boiling water 1 can (9 ounces) tuna packed in water, drained Vegetable oilPREPARATION:
- Combine cornmeal mix, onion, pimiento, salt, red pepper and black pepper in small bowl.
- Slowly stir water into cornmeal mixture. (Mixture will be thick.) Stir in tuna.
- Pour oil into large skillet to depth of 1/2 inch; heat over medium heat until hot (about 375°F on deep-fry thermometer).
- Drop cornmeal mixture by tablespoonfuls into hot oil. Fry over medium heat 1 minute per side or until golden brown. Drain on paper towels.
