Linguine with Spinach, Beans and Ham

COOK TIME 25 minutes

YIELD 6 servings (1-1/3 cups each)

Tender linguine tossed with spinach, white beans, tomatoes and ham

INGREDIENTS

1 can (15 oz ea) small white or garbanzo beans, drained, rinsed 1 can (14.5 oz each) chicken broth 1/4 Cup shredded Parmesan cheese 1 can (14.5 oz ea) Hunt's® Diced Tomatoes with Roasted Garlic, undrained 1/4 Cup Hunt's® Tomato Paste 3 *serving PAM® Original No-Stick Cooking Spray 1 pkg (12 oz each) dry linguine pasta, uncooked 4 Ounce fully cooked lean ham, cut into thin strips 1/4 Teaspoon salt 1/4 Teaspoon ground black pepper 2 pkg (6 oz ea) fresh spinach leaves

PREPARATION:

  1. Cook linguine according to package directions. Meanwhile, heat large skillet over medium-high heat 1 minute. Spray with cooking spray. Add spinach; cook 2-3 minutes, or until spinach is wilted, stirring frequently.
  2. Add beans, tomatoes with their liquid, the broth, ham, paste, salt and pepper. Bring to a boil. Reduce heat to low; simmer, uncovered, 10 minutes.
  3. Drain pasta; add to skillet. Toss; top with Parmesan cheese.
