Salmon makes a fabulous addition to any healthy diet. Its low fat content makes it a perfect protein substitute for fatty cuts of beef.
INGREDIENTS
1 cup fresh basil, stems removed 1/4 cup freshly grated Parmesan cheese 2 cloves garlic 1 tablespoon olive oil 3/4 cup plain nonfat yogurt 1/3 cup fat-free (skim) milk 12 ounces uncooked medium-size pasta shells or conchiglie 8 ounces smoked salmon, cut into bite-size pieces 4 tablespoons chopped pecans, toastedPREPARATION:
- Place basil, Parmesan, garlic and oil in food processor or blender; process until finely chopped. Set aside.
- Combine yogurt and milk in small bowl; set aside.
- Cook pasta according to package directions, omitting salt. Drain well. Transfer to large serving bowl. Add basil mixture, yogurt mixture, salmon and pecans. Mix well. Garnish as desired. Serve immediately.
