Tarragon, a perennial herb native to western Asia. Tarragon is grown for its aromatic leaves, which are used as seasoning in vinegar, mustard, pickles, and other foodstuffs. Essential oils derived from the green parts of the plant are used as perfume and as food flavoring. Tarragon grows to about two feet (60 cm) in height.
