Way-Out Western B.B.Q. Sauce

YIELD Makes 10 servings

INGREDIENTS

1/2 cup chili sauce 1/4 cup fresh lemon juice 1/4 cup ketchup 2 tablespoons dry mustard 2 tablespoons brown sugar 2 tablespoons cider vinegar 2 tablespoons dark molasses 1 tablespoon Worcestershire sauce 2 teaspoons grated fresh lemon peel 1/2 teaspoon garlic powder 1/2 teaspoon ground allspice 1/2 teaspoon liquid smoke (optional) 1/4 teaspoon hot pepper sauce

PREPARATION:

  1. Place all ingredients in small bowl and stir until blended. Brush on meats during last 15 minutes of grilling or at beginning of grilling if cooking time is less than 15 minutes.
Note Because it has such a high sugar content, barbecue sauce often burns easily. To prevent this, brush sauce on only during the last 15 minutes of grilling or serve it on the side. Note To avoid spreading bacteria from raw meats with the basting brush, pour only the sauce needed for basting into a small bowl and discard any that remains after basting.
