Creamy Ham & Spinach Fettuccine: Easy Recipe

 
INGREDIENTS

1 cup fat-free (skim) milk 1/2 cup fat-free cottage cheese 2 teaspoons cornstarch 1/4 teaspoon ground mace 1/8 teaspoon black pepper 4 ounces uncooked plain fettuccine 4 ounces uncooked spinach fettuccine Nonstick cooking spray 4 ounces reduced-fat deli-style ham, diagonally sliced 2 tablespoons snipped chives 1 cup frozen peas, thawed and drained 1/4 cup grated Parmesan cheese 1/8 teaspoon paprika

PREPARATION:

  1. Combine milk, cottage cheese, cornstarch, mace and pepper in blender or food processor; process until smooth. Set aside.
  2. Cook pasta according to package directions, omitting salt. Drain; set aside. Meanwhile, spray large nonstick skillet with cooking spray; heat over medium heat until hot. Add ham and chives; cook and stir until ham is lightly browned. Add milk mixture and peas; cook and stir until thickened.
  3. Remove from heat. Add pasta and Parmesan cheese; toss to coat evenly. Sprinkle with paprika; serve immediately.
