cup butter or margarine, softened

tablespoon dry white wine

teaspoons minced garlic

teaspoon grated lemon peel

teaspoon black pepper

pounds red snapper, orange roughy or grouper fillets (about 4 to 5 ounces each)
PREPARATION:
- Preheat oven to 450°F. Combine butter, wine, garlic, lemon peel and pepper in small bowl; stir to blend.
- Place fish in foil-lined shallow baking pan. Top with seasoned butter. Bake 10 to 12 minutes or until fish begins to flake easily when tested with fork.
Tip
Serve fish over mixed salad greens, if desired. Or, add sliced carrots, zucchini and bell pepper cut into matchstick-size strips to the fish in the baking pan for an easy vegetable side dish.
