Diced tomatoes and shredded chicken in a creamy coconut soup
INGREDIENTS
1 Cup shredded cooked chicken (1 cup = 4 oz) 1 can (13.5 oz ea) coconut milk 6 thin slices peeled fresh ginger 1 can (14.5 oz ea) Hunt's® Diced Tomatoes, undrained 1 *serving Thinly sliced green onions, optional 1 Tablespoon chili garlic sauce 2 Tablespoon fish sauce 1/2 Cup waterPREPARATION:
- Combine all ingredients in medium saucepan. Cook over medium-low heat 10 minutes, or until hot and flavors have blended, stirring occasionally.
- Divide soup between 4 bowls. Garnish with sliced green onions, if desired.
