INGREDIENTS
12 ounces small red potatoes (about 8) 1 teaspoon salt 3 tablespoons sour cream* 3 tablespoons unsalted butter 1 tablespoon milk 1 tablespoon chopped fresh chives (optional) *Any dairy product can be used: sour cream, buttermilk or heavy cream.PREPARATION:
- Bring enough water to cover potatoes by 2 inches to a boil in medium pot over high heat; reduce to vigorous simmer. Cook until tender, about 20 minutes.
- Drain and transfer to medium bowl. Add salt, sour cream, butter and milk, and mash with potato masher until blended.
