1‑1/2 pounds meat loaf mix* or ground beef 1/2 pound cooked ham, finely chopped 1 cup plain dry bread crumbs 1 cup finely chopped onion 2 eggs, lightly beaten 1/2 cup chili sauce or ketchup 1 teaspoon plus 1/8 teaspoon salt, divided 1/2 teaspoon caraway seeds 1/4 teaspoon black pepper 1/2 cup sour cream 3 tablespoons thinly sliced green onions 1 tablespoon prepared horseradish 1 tablespoon spicy brown or coarse-grained mustard *Meat loaf mix is a combination of ground beef, pork and veal; see your meat retailer or make your own with 1 pound lean ground beef, 1/4 pound ground pork and 1/4 pound ground veal.PREPARATION:
Slow Cooker Directions
- Combine meat loaf mix, ham, bread crumbs, onion, eggs, chili sauce, 1 teaspoon salt, caraway seeds and pepper in large bowl; mix well. Shape meat mixture into 7-inch round loaf.
- Prepare foil handles for slow cooker (see below). Place meat loaf on top of foil strips. Using strips, place meat loaf into slow cooker. Cover; cook on LOW 4 to 4-1/2 hours or until meat thermometer inserted into center of meat loaf reads 165°F. Use foil strips to remove meat loaf from slow cooker. Let stand 5 minutes.
- Meanwhile, combine sour cream, green onions, horseradish, mustard and remaining 1/8 teaspoon salt in small bowl; mix well. Cut meat loaf into wedges; serve with horseradish sauce.
