INGREDIENTS
5 tablespoons butter, cut into small pieces 1 tablespoon lime juice 3 cloves garlic 2 teaspoons ground ginger 1/2 teaspoon hot pepper sauce Salt Black pepper 6 red snapper fillets (about 1-1/2 pounds)PREPARATION:
- Preheat broiler.
- Combine butter, lime juice, garlic, ginger, pepper sauce, salt and pepper to taste in food processor; process until smooth paste forms.
- Broil red snapper 4 to 5 inches from heat 5 minutes. Turn fillets over and broil 4 minutes.
- Place about 1 tablespoon reserved butter mixture on top of each fillet; broil 45 seconds. Serve immediately.
