Easy Chicken & Wild Rice Skillet - One-Serving Recipe

 

YIELD Makes 1 serving

INGREDIENTS

1 teaspoon reduced-fat margarine 2 ounces boneless skinless chicken breast, cut into strips (about 1/2 chicken breast) 1 package (5 ounces) long-grain and wild rice mix with seasoning 1/2 cup water 3 dried apricots, cut up

PREPARATION:

  1. Melt margarine in small skillet over medium-high heat. Add chicken; cook and stir 3 to 5 minutes or until cooked through.
  2. Meanwhile, measure 1/4 cup of the rice and 1 tablespoon plus 1/2 teaspoon of the seasoning mix. Reserve remaining rice and seasoning mix for another use.
  3. Add rice, seasoning mix, water and apricots to skillet; mix well. Bring to a boil. Cover and reduce heat to low; simmer 25 minutes or until liquid is absorbed and rice is tender.
