Cinnamon Dessert Taco with Fruit Salsa

YIELD Makes 6 servings

INGREDIENTS

1 cup sliced fresh strawberries 1 cup cubed fresh pineapple 1 cup cubed peeled kiwi 1/2 teaspoon minced jalapeño pepper* (optional) 2 packets sugar substitute or equivalent of 4 teaspoons sugar (optional) 3 tablespoons sugar 1 tablespoon ground cinnamon 6 (8-inch) flour tortillas Nonstick cooking spray *Jalapeño peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.

PREPARATION:

  1. Stir together strawberries, pineapple, kiwi, jalapeño pepper and sugar substitute in large bowl; set aside. Combine sugar and cinnamon in small bowl; set aside.
  2. Spray tortilla lightly on both sides with cooking spray. Heat over medium heat in nonstick skillet until slightly puffed and golden brown. Remove from heat; immediately dust both sides with cinnamon-sugar mixture. Shake excess cinnamon-sugar back into small bowl. Repeat cooking and dusting process until all tortillas are warmed.
  3. Fold tortillas in half and fill with fruit mixture. Serve immediately.
