Pimento
Pimento, an aromatic tree of the West Indies and Central America. It is closely related to the true bayberry, or bay rum tree. The pimento grows about 40 feet (12 m) tall, and has leathery leaves, small white flowers, and clusters of pea-sized fruits. The dried unripe fruit is the spice called pimento, allspice, or Jamaica pepper. Pimento is used in mincemeat, for flavoring wines, and as a pickling spice. Oil of pimenta, distilled from the leaves, is used medicinally as a stimulant; it is also an ingredient in bay rum, a hair tonic.
The pimento is Pimenta dioica of the myrtle family, Myrtaceae.
