Bitterroot, a plant that grows in mountainous regions of the western United States and Canada. Bitterroot is particularly plentiful in Montana, where it is the state flower. The deep pink to nearly white flowers grow on short stalks within a rosette of five to eight thick leaves. The plant's root is edible in spring, but becomes bitter in the summer.

The bitterroot is Lewisia rediviva of the family Portulacaceae.
