Easy Sunny Day Breakfast Burritos | Simple Recipe

 
INGREDIENTS

1 tablespoon butter 1/2 cup red or green bell pepper, chopped 2 green onions, sliced 6 eggs 2 tablespoons milk 1/4 teaspoon salt 4 (7-inch) flour tortillas, warmed 1/2 cup shredded colby-Jack or Mexican blend cheese 1/2 cup salsa

PREPARATION:

  1. Melt butter in medium skillet over medium heat. Add bell pepper and green onion; cook and stir about 3 minutes or until tender.
  2. Beat eggs, milk and salt in medium bowl. Add egg mixure to skillet; reduce heat to low. Cook, stirring gently, until eggs are just set. (Eggs should be soft with no liquid remaining.)
  3. Spoon egg mixture down center of tortillas; top with cheese. Fold in sides to enclose filling. Serve with salsa
