Easy Chile Kabobs Recipe | Smoky & Cheesy Turkey Bites

 
INGREDIENTS

1 large poblano chile* 4 ounces smoked turkey breast, cut into 8 cubes 4 ounces pepper jack cheese, chilled and cut into 8 cubes 1/4 cup salsa (optional) *Chiles can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.

PREPARATION:

  1. Preheat toaster oven to 400°F. Soak 4 wooden skewers in cold water 10 minutes. Drain and set aside. Place chile in pot of boiling water. Cook for 1 minute. Drain well. Core, seed and cut chile into 12 bite-size pieces.
  2. Insert 1 piece chile onto wooden skewer. Add 1 piece turkey; 1 piece cheese. Follow with 1 piece chile, 1 piece turkey; 1 piece cheese. End with chile. Repeat with remaining 3 skewers.
  3. Place kabobs on toaster oven baking pan. Bake 3 minutes or until cheese starts to melt. Remove immediately. If desired, spoon salsa over kabobs to serve.
