Skillet Sausage and Bean Stew

INGREDIENTS

1 pound spicy Italian sausage, cut into pieces 1/2 onion, chopped 2 cups frozen O'Brien hash brown potatoes with onions and peppers 1 can (15 ounces) pinto beans, undrained 3/4 cup water 1 teaspoon beef bouillon granules or 1 beef bouillon cube 1 teaspoon dried oregano 1/8 teaspoon ground red pepper

PREPARATION:

  1. Combine sausage and onion in large nonstick skillet; cook and stir over medium-high heat 5 to 7 minutes or until meat is cooked through. Drain fat.
  2. Stir in potatoes, beans, water, bouillon, oregano and red pepper; reduce heat to medium. Cover; simmer 15 minutes, stirring occasionally.
LIGHTEN UP You can reduce the calories and fat content of this dish by substituting turkey sausage for Italian sausage. Add hot pepper sauce to taste if you prefer a spicier stew.
