Sweet and Savory Sausage Casserole

YIELD Makes 4 to 6 servings

INGREDIENTS

2 sweet potatoes, peeled and cut into 1-inch cubes 2 apples, peeled, cored and cut into 1-inch cubes 1 medium onion, cut into thin strips 2 tablespoons vegetable oil 2 teaspoons Italian seasoning 1 teaspoon garlic powder 1/2 teaspoon salt 1/2 teaspoon black pepper 1 pound cooked Italian sausage, cut into 1/2-inch pieces

PREPARATION:

  1. Preheat oven to 400°F. Spray 13X9-inch baking pan with nonstick cooking spray.
  2. Combine potatoes, apples, onion, oil, Italian seasoning, garlic powder, salt and pepper in large bowl. Toss to coat evenly. Place potato mixture into prepared pan. Bake, covered, 30 minutes. Add sausage to potato mixture; bake 5 to 10 minutes or until sausage is heated through and potatoes are tender.
