INGREDIENTS
1/3 cup dried cranberries 1/4 cup pecan pieces 2 tablespoons butter, softened 1 tablespoon packed dark brown sugar 1/2 teaspoon ground cinnamon 1/2 teaspoon vanilla 2 medium apples, such as Gala or Jonathan Cooking sprayPREPARATION:
- Preheat oven 425°F. Line a baking sheet with foil; set aside.
- In medium bowl, mix cranberries, pecans, butter, sugar, cinnamon and vanilla. Stir until combined.
- Slice ends off apples, then slice each apple into 4 round slices, to yield 8 rings total. Remove centers, using the tip of a teaspoon to press down all the way around to remove pith and seeds.
- Coat baking sheet with cooking spray and arrange apple slices on baking sheet. Spoon equal amounts of cranberry mixture in center of each, (about 1 tablespoon each), press down gently to adhere and bake 10 minutes or until apples are JUST tender. Serve warm or room temperature.
