INGREDIENTS
1 package (4-serving size) sugar-free berry- or berry-and-fruit-flavored gelatin 1 cup water 1 cup sliced frozen strawberries 1 cup frozen blueberries 2 ounces reduced-fat cream cheese 1/4 cup fat-free sour cream 1/4 cup fat-free half-and-half 2 packets sugar substitute 1/4 teaspoon ground cinnamon 1/8 teaspoon almond extract Fresh lettuce leaves for garnish (optional) 4 whole fresh strawberries (optional)PREPARATION:
- Bring water to a boil in medium saucepan over high heat. Remove from heat. Add gelatin; stir until completely dissolved. Stir in frozen berries.
- Pour gelatin mixture into 8-inch square glass dish or nonstick baking pan.* Cover with plastic wrap; refrigerate until firm.
Or, the gelatin mixture can also be poured into 4 (4-ounce) glass dishes, if desired.
- Meanwhile, combine remaining ingredients, except lettuce leaves, in small mixing bowl; whisk until smooth. Cover; refrigerate.
- When gelatin mixture is firm, spoon cream cheese mixture evenly over top. Serve on bed of lettuce leaves and garnish with fanned strawberries, if desired.
