Cinnamon Poached Pears: A Simple & Elegant Dessert

 
INGREDIENTS

1 can (5-1/2 ounces) apricot nectar 1 tablespoon sugar 1 teaspoon lemon juice 1/2 teaspoon ground cinnamon 1/4 teaspoon grated lemon peel 1/8 teaspoon ground cloves 2 large pears

PREPARATION:

  1. Combine apricot nectar, sugar, lemon juice, cinnamon, lemon peel and cloves in large skillet. Bring to a boil over medium-high heat.
  2. Meanwhile, cut pears lengthwise into halves, leaving stem attached to one half. Remove cores. Cut pears lengthwise into thin slices, taking care not to cut through stem end. Add pears to skillet with nectar mixture; bring to a boil over medium-high heat. Reduce heat to medium-low. Simmer, covered, 6 to 8 minutes or until pears are just tender. Carefully remove pears from skillet, reserving liquid.
  3. Simmer liquid in skillet, uncovered, over medium heat 2 to 3 minutes or until mixture slightly thickens, stirring occasionally. Fan out pears; spoon sauce over pears. Serve pears warmed or chilled.
