Pectin
Pectin, one of a group of poly-saccharides (carbohydrates) occurring in the cell walls of all higher plants. Purified pectins are white, powdery substances or syrupy concentrates. They are usually soluble in water. Under proper conditions, such as the presence of sugar, pectins will cause the substances in which they are present to gel, or set. Pectins are used in the preparation of jellies and jams. They are also important additives in canned and frozen foods. Some pectins are used in the manufacture of drugs and cosmetics. In the United States, most commercial pectins are produced from apples, beets, and citrus fruits.
