Classic Bananas Flambé Recipe - YIELD

 

YIELD Makes 2 servings

INGREDIENTS

2 tablespoons butter or margarine 1/2 teaspoon ground cinnamon 2 small firm ripe bananas, peeled and cut in half lengthwise 2 tablespoons frozen unsweetened apple juice concentrate 2 tablespoons brandy or cognac

PREPARATION:

  1. Melt butter in 10-inch skillet over medium heat. Stir in cinnamon. Add bananas; cook until thoroughly heated, about 1 minute per side. Add apple juice concentrate; cook 1 minute, stirring occasionally. Drizzle with brandy; remove from heat. Carefully ignite with lighted match; carefully shake skillet until flames are extinguished. Transfer bananas to individual dessert dishes, reserving liquid in skillet. Cook liquid over medium-high heat until thickened and bubbly, about 1 minute. Pour over bananas; serve immediately.
