INGREDIENTS
1 bag (20 ounces) cherry tomatoes 1/4 cup (1 ounce) shredded mozzarella cheese 20 slices pepperoniPREPARATION:
- Preheat broiler. Slice upper 1/8 inch off stem end of tomatoes using paring knife; reserve tops. Core tomatoes using small melon baller or by carefully pinching out core using thumb and index finger.
- Fill each tomato with cheese; top with slice of pepperoni. Cover with reserved tomato top; secure with toothpick.
- Place filled tomatoes on baking sheet. Broil about 6 inches from heat for 3 minutes or until cheese is melted and tomatoes just begin to shrivel.
- Transfer tomatoes to paper towel-lined plate to drain. Remove toothpicks before serving. Serve warm.
