Brownie Zoo Cake

YIELD Makes 8 servings

INGREDIENTS

1 package (18 ounces) brownie mix, plus ingredients to prepare mix 1 container (16 ounces) cream cheese frosting Edible Animals, recipe follows

PREPARATION:

1. Prepare brownie mix according to package directions and bake in 8-inch round cake pan coated with nonstick cooking spray. Remove from oven and cool 10 to 15 minutes in pan. Run knife around edge to loosen. Remove from pan and invert on wire rack to cool completely. While brownie cools, lightly score into 8 equal wedge-shaped sections.
2. Frost sides of brownie cake with frosting. Sprinkle almond slices on large dinner plate. Pick brownie up and tilt sideways, rolling frosted edge through almonds. Press almonds into frosting with hand. Place brownie cake on serving platter.
3. Place about 1 cup frosting in small reasealable plastic food storage bag. With scissors, snip off one corner of bag. Gently squeeze bag to pipe squiggly lines of frosting in each scored wedge. Make animals according to following directions or create your own creatures. Place one animal on top of each wedge.

Edible Animals Mouse: Attach two mini chocolate sandwich cookies together with frosting. Attach chocolate kiss for head, inserting two almond slices between head and body for ears. Use decors for eyes and nose and licorice whip for tail.Snail: Attach two mini fudge-strip cookies together with chocolate frosting. Pipe wide strip of chocolate frosting on brownie wedge, ending with a button of frosting for snail head. Set cookies on side in middle of frosting strip. Add decors to snail head for eyes and two short pieces of licorice whip for feelers.Rabbit: Cut large marshmallow in half vertically, then cut each half horizontally. With a dab of frosting, attach one piece to end of large whole marshmallow for rabbit's head. Attach mini marshmallow to other end for tail. Stretch 2 remaining quarters into ears and attach to body with frosting. Attach pink decors for nose and eyes; pipe on whiskers. This recipe appears in: Cooking with Kids
